GRAB-N-GO EGG CUPS
12 Ham or Turkey Slices
Grated Cheddar or Parmesan
12 Large Eggs
Freshly ground black pepper
Chopped fresh parsley, green onion or chives
These ingredients are to your preference. Get creative and do what works for your family.
Preheat oven to 200ºC and grease a 12-cup muffin tin with cooking spray. Line each cup with a slice of ham or turkey. Crack an egg into each ham or turkey cup and season with salt and pepper and top with your cheese.
Bake until eggs are cooked through, 12 to 15 minutes (depending on how runny you like your yolks). I do the jiggle test, I wiggle the pan to see check the firmness of the eggs. Pull them out when they are your desired consistency.
Garnish with your toppings and serve.
You can refrigerate these and pop them in a ziplock bag. Pull them out when you need a quick bite!
